Brazil stands as the largest global coffee producer. The coffee originating from the Mogiana region, which is spread across São Paulo and Minas Gerais states, holds the highest reputation among three key Brazilian cultivation areas. This geographic zone is characterized by undulating landscapes and irregular terrains, giving rise to farms of moderate size, ranging from small to medium.
The specific beans are sourced from the Cooperativa Regional de Cafeicultores em Guaxupé (Cooxupé), an establishment founded in 1937. Presently, Cooxupé boasts 14,000 active members. On average, these producers manage farms spanning 60 acres or more. Every producer is responsible for nurturing and harvesting their own coffee cherries, which are subsequently placed on patios to naturally dry until they reach a moisture content of 15 percent. The drying process is then fine-tuned to achieve precisely 11 percent moisture using mechanical drying equipment. After careful storage, the coffee undergoes milling and export procedures at the Cooxupé dry mill. This facility maintains stringent traceability and quality control measures, ensuring that each producer is compensated in accordance with the caliber of their coffee.
The grading on these beans are Fine Cup (FC) and Strictly Soft (SS), the highest cup category in the Brazilian coffee grading system. They are roasted to Full City (Medium) for a smooth, clean and rich cup of coffee, with hints of chocolate, caramel and floral.
